Production area: San Marzano (TA), Sava (TA), Fragagnano (TA), Grottaglie (TA), and Francavilla Fontana (BR)

Olive variety: Blend of local varieties, predominantly Coratina and Ogliarola Leccese

Harvest period: November – January

Harvest and extraction method: The olives are picked from the tree at the right level of ripeness, using the traditional method of hand-picking and mechanical shaking.
In the immediate following phase,the olives are processed through a cold pressing system and separation using a continuous cycle system.

Organoleptic characteristics: The oil is bright green in color with golden highlights. On the nose, it reveals an elegant fruitiness that on the palate is combined with excellent fluidity.

Use: Ideal complement to appetizers based on raw or steamed fish, crustaceans and mollusks, and delicate first courses.

Consumption notes: Extra virgin olive oil is a completely natural product, obtained by simply pressing the olives. It contains no preservatives and therefore requires special precautions when storing it: it must be carefully stored in a cool, dry place, away from light and heat sources.
Only in this way can it optimally preserve all its characteristics and values ​​for a long time.
