Harvest: First ten days of October.
Vinification: The soft pressing is followed by cold maceration for approximately 24 hours 10°C. After soft pressing, the must is left to decant for 36 hours, before be decanted and left to ferment at a temperature of 18°C. The wine, after a couple of months of conservation on the fine lees, it is decanted and then bottled; follows bottle refinement.
Tasting notes: The color is bright cherry pink. On the nose it presents aromas elegant with fresh red fruit (raspberry, wild strawberries, pomegranate, cherry) and subtle floral nuances, in a delicately spicy background. It presents itself on the palate consistent, with a nice freshness, tasty and persistent; in the finish in the mouth it has fine and silky tannins, with a mineral finish and a pleasant aftertaste almondy.
Best served with: Ideal with fish soups, grilled fish, spaghetti with tomato sauce and basil, delicate cured meats (not very fatty), roasted white meats and medium cheeses seasoning. It pairs well with cumin-based or spicy dishes, thanks to a good acidity and soft tannins. Pleasant as an aperitif.
