Vinification: The destemmed bunches are not pressed at the end to respect the maximum integrity of the skins. The must-wine ferments with its own stalks according to a patented technique that allows the aromatic and gustatory complexity to be enhanced of Cabernet Sauvignon. During alcoholic fermentation, frequent fermentation is carried out pumping over to favor the extraction of aromas, color and tannins from the pomace. Finished maceration, which varies from 8 to 10 days, the racking is carried out.
Tasting notes: It opens olfactorily with notes of ripe cherry blackcurrant, continues with a fresh minty balsamicity to close on tones of medicinal herbs. The sip is striking for its smoothness and balance combined with a depth of flavor, which flows into a mouth closure that recalls blackcurrant. Elegant, conservative and territorial. Pairing: first courses with traditional Tuscan meat sauce, grilled meats, medium-aged cheeses.
