Vinification: The destemmed bunches are not pressed in order to respect the maximum integrety of the skin. During alcholic fermentation, frequent pumping over is carried over to favor the extraction of aromas, color and tannins from the pomace. Once the maceration is finished, wich varies from 7 to 12 days the racking is carried out. Subsequently the wine is decanted and undergoes malolactic fermentation lasting approximately 10 days at a controlled temperature of 20˚C.
Tasting notes:
Aromas of small red and black berries are linked to an elegant note of undergrowth. At the first sip it excites, the freshness and smoothness create a dynamism that is expressed through an ease of drinking that only the great Pinot Noir can offer. An Apennine DNA gives elegance and infinite persistence.
