Vinification: The destemmed bunches are not pressed in order to respect the maximum integrety of the skin. During alcholic fermentation, frequent pumping over is carried over to favor the extraction of aromas, color and tannins from the pomace. Once the maceration is finished, wich varies from 7 to 12 days the racking is carried out. Subsequently the wine is decanted and undergoes malolactic fermentation lasting approximately 10 days at a controlled temperature of 20˚C.

Tasting notes:

It is the La Guardiola blend, designed according to the individual harvest. Every year slightly different to give the best possible reading of the harvest. Syrah for the spicy component and volume, Sangiovese for freshness and elegance, Merlot for roundness and softness. A Tuscan mosaic of drink and flavour.
