Soil: Clayey soil slightly alkaline.

Vinification: Soft pressing of the grapes carefully selected during harvesting. The maceration with the skins lasts 25 days, during which they are carried out several pumping overs, to obtain optimal extraction of polyphenols and polysaccharides. The aging takes place in 500 liter French oak tonneaus for a period of 18 months, followed by 6 months of bottle aging.
Tasting notes: The color is deep ruby red, with garnet shades. On the nose there are evident hints of red fruit jam (cherry, black cherry), withered flowers, enriched by soft notes of spices (cardamom) and sweet tobacco. On the palate it is intense, tannic, subtle flavor with aroma of licorice and morello cherry. The acidity is well integrated into a persistent body, supported by velvety tannins. The base has spicy hints with a savory, persuasive finish, marked by hints of black cherry.
Best served with: Boiled, braised, roast meats (sliced beef, lamb, kebabs), mature cheeses.
