Vinification: The destemmed bunches are not pressed in order to respect the maximum integrety of the skin. During alcholic fermentation, frequent pumping over is carried over to favor the extraction of aromas, color and tannins from the pomace. Once the maceration is finished, wich varies from 7 to 12 days the racking is carried out. Subsequently the wine is decanted and undergoes malolactic fermentation lasting approximately 10 days at a controlled temperature of 20˚C.
Tasting notes:
A scent of violet and small red fruits are integrated with a light vanilla note. In the mouth it has a beautiful softness balanced by a marked freshness, linked to the altitude at which it grows, 604 m above sea level, a uniqueness in the Tuscan territory which gives further elegance to this Sangiovese.

pleasant pairing with porcini mushroom crepe, pasta and beans, roasts and cured meats
