Vinification: The destemmed bunches are not pressed in order to respect the maximum integrety of the skin. During alcholic fermentation, frequent pumping over is carried over to favor the extraction of aromas, color and tannins from the pomace. Once the maceration is finished, wich varies from 7 to 12 days the racking is carried out. Subsequently the wine is decanted and undergoes malolactic fermentation lasting approximately 10 days at a controlled temperature of 20˚C.
Tasting notes: An intense, important sense of smell, with cherry jam, wich leaves room for aroma of violets and accent of vanilla. In the mouth is soft and round. An agile drinks thanks to a structure balanced by a particular freshness and a pleasant light-heartedness.
Best served with: Legume soup, grilled red meats, fiorentina steak.
