Vinification: The destemmed bunches are not pressed in order to respect the integrity of the skin as much as possible. During alcoholic fermentation, frequent pumping over is carried out to promote the extraction of aromas, color and tannins from the marc. Once the maceration is completed, which varies from 7 to 12 days, the settling is carried out. Then, the wine is decanted and undergoes malolactic fermentation lasting approximately 10 days at a controlled temperature of 20°C.

Tasting notes: The crisp pear announces a scent of white flowers with a perceptible nuance of geranium.
The first sip is accompanied by a light note of grapefruit, a dry, fresh and mineral wine, dynamic, with a long almond finish. Best served: with on the table both with the grill and with long preparations
